Gorgonzola (gore ghan zo la)
Made in: USA Cow's Milk
Named after its Italian cousin, domestic Gorgonzola is a blue-green veined cheese with a taste similar to domestic blue. Gorgonzola is aged a minimum of three months. It is a little more piquant than our regular blue and firmer than it’s imported cousin. Gorgonzola is easily crumbled or sliced and adds zest to any green salad or pasta.
Beverage Pairing: Robust spicy red wine


Pecorino Romano (peh-koh-ree-noh roh-mah-noh)
Made in: Italy Sheep's Milk
Pecorino Romano is a flavorful, hard Italian cheese from Southern Italy used primarily for grating. Pecorino Romano is produced in 40 to 60 lb. wheels and aged 8 to 12 months. When young it is eaten frequently with fruit and bread, when aged it is firmer and used for cooking. Use Pecorino Romano to perk up pastas, salads, soups and pizza.

Provolone (pro voe loan)
Made in: USA Cow’s Milk
Verdaccio Provolone is the standard of excellence in domestic provolone. It is made with whole cow’s milk and sold while it is young. Mild and semi firm, provolone is pleasing to the palate. Provolone cheese becomes drier and sharper with age and is used in many Italian cooking recipes. Provolone cheese slices readily, it doesn't crumble and shreds well. Use Provolone on sandwiches (steak & cheese) or pizzas.
Beverage Pairing: Rough red wine or cold beer


Reggiano Parmigiano (rej-ee-ahn-oh, parm-eh-gee-oh)
Made in: Italy Cow's Milk
The best Parmesan in the world, Reggiano Parmigiano is a hard cheese made from whole milk and aged a minimum of 18 months. It has a slightly sweet and nutty flavor with a grainy texture. Reggiano Parmigiano can be eaten as is, or easily shredded for cooking applications. It can also be finely grated to ad zest to a favorite pasta, vegetable, salad or popcorn.
