| Baby Swiss is a delightfully
mild, buttery and creamy cheese with a distinct Swiss
cheese flavor. Baby Swiss is soft white in appearance
with soft silky small eyes, it was first produced in
1950 in 5 lb wheels. Use Baby Swiss as you would any
other Swiss Cheese, for soups, sauces, fondue, salads,
sandwiches, casseroles and snacking. |

Blue cheese represents one of the brightest aspects of American cheese production. Blue veined cheeses are marbled with visible mold cultures within their interiors. Made in Wisconsin from pasteurized cow’s milk, Dutch Garden Blue is piquant with a full, earthy flavor. Use sliced on a burger, in salad dressings, dips or crumbled over a salad, pasta or vegetables.

The "big cheese" of American cheeses is Cheddar, originally made in Cheddar, England. This cheese can be found in white or yellow with a rich, nutty flavor that becomes sharper with age. Mild Cheddar is aged 30 to 60 days, it has a firm, supple texture, it slices easily and is well-suited to melting applications. The process of milling and piling curds prior to pressing is called Cheddaring, which is where Cheddar gets its name. It shreds well and compliments an omelet quite nicely. As with all cheddars; use for anything: breakfast, snacking, on sandwiches, or with fruit.

An American original from the 19th century first produced in Colby, Wisconsin. Traditionally formed in longhorn molds, this cheese is soft orange in color with a milder flavor and more open texture than cheddar cheese. Colby cheese has a creamy taste that’s a wonderful topper for any dish. Try Colby on your next sandwich or serve on top of hot apple pie or cubed with fresh apples. |

Slightly tangier than its better known cousin, Gouda, Holland Edam is made from partially skimmed milk. Pale yellow in appearance, Holland Edam is mild, slightly salty and smooth. Holland Edam is produced in 5 lb loaves coated with red wax. A great breakfast cheese that goes well with sturdy breads and sausage.

Named for a small town near Rotterdam, Holland where over 800 years ago farmers brought Gouda Cheese to market. Made in wheels of 8-10 pounds, Gouda has a slightly more buttery flavor than Edam. Renowned throughout the world, Gouda can be used at any meal: at breakfast-with hard rolls and salami and hard boiled eggs, or to compliment luncheon meats or as a dinner appetizer.

Muenster Cheese originated in the medieval monasteries and was first made by monks. Muenster, made in the USA is a mild, semi-soft cheese with some tiny eye formation. Muenster cheese will enhance any party tray with its soft white interior and bright orange exterior. Produced in 5 lb loaves, it has a smooth texture and melts readily. Use for snacking or slice for sandwiches. Muenster is a wonderful selection to serve with fruit.

Lightly smoked, pasteurized process cheese made from Gouda and Maasdam cheeses, it has a mild, smooth, smoky flavor and a rich cream coloring on the interior. Great breakfast cheese, serve with hard rolls, salami and hard boiled eggs.
