Soft-Ripened
Soft-ripened cheeses fall into two distinct groups, called Bloomy Rind and Washed Rind. Bloomy Rind cheeses have a dusty white rind that is edible and offers a wonderful contrast to the creamy, almost liquid cheese inside. Many of these cheeses have an earthy mushroom flavor. Washed Rind cheeses are orange in color, with a strong aroma and flavor.

From appetizer to dessert, soft-ripened cheeses are among the most versatile. Try baking a whole Brie in a pastry crust or add slices to your favorite turkey sandwich on crusty French bread.
