Pasta Filata
Dating from as far back as the Renaissance, pasta filata cheeses are widely used as both ingredients and snacks. They are cooked and kneaded to create their distinctively resilient texture that “strings” when separated. From fresh to smoked, soft to firm, and mild to flavorful, the diversity of this category is represented throughout Mediterranean cuisine.
Pasta filata cheese varieties include:
- Mozzarella
- Provolone
- Scamorza
For a different twist, put provolone on a pizza topped with roasted chicken, artichoke hearts and sun-dried tomatoes. Slice fresh mozzarella with tomatoes and basil for a classic caprese salad.
