Colby/Colby Jack
An American original from the 19th century first produced in Colby, Wisconsin. Traditionally formed in longhorn molds, this cheese is soft orange in color with a milder flavor and more open texture than cheddar cheese. Colby cheese has a creamy taste that’s a wonderful topper for any dish. Try Colby on your next sandwich or serve on top of hot apple pie or cubed with fresh apples.
