Blue
The cheeses of the Blue (or Bleu) category are among the most distinctive cheeses produced throughout the world. Made from cow’s milk, sheep’s milk or goat’s milk, they get their unique flavor from veining, ranging in color from blue to green, of edible molds. These molds originally occurred naturally in the environments of the caves in which cheese was aged. Blues range from creamy to crumbly and are often well salted to balance their piquant taste.

All of these cheeses are excellent additions when crumbled over a salad, sliced & melted on hamburgers and blended in dressings.
